Plus, you can prep some parts of this sugar cookie fruit pizza recipe ahead of time. I’m making this as my Easter dessert this year.

- Make the sugar cookie dough in a 13-inch round pizza pan. Let the cookie cool completely before topping with the frosting and fruit.
- Make the lemony cream cheese frosting. You can do this while the cookie is cooling.
- Spread the frosting on the cookie and top with the fruit of your choice.
Can I make the sugar cookie fruit pizza recipe ahead of time?
Yes! I recommend making the sugar cookie fruit pizza recipe the day before. You can store it at room temperature. Then the day that you plan to serve it, make the frosting and top with the fruit. You can do this part a few hours before serving and store in the fridge. I don’t recommend topping with fruit and frosting the day before as the fruit will wilt and you may end up with a soggier presentation than planned.

- Chill the sugar cookie dough in the pan for at least 20 minutes before baking. This will help the cookie keep it’s shape.

- 13-inch pizza pan
Ingredients
Sugar Cookie Base
- 1 cup butter, room temperature
- 1 cup granulated sugar
- 1 egg
- 1 tsp lemon juice
- 1 tsp grated lemon zest
- 2¼ cup all-purpose flour
- ¼ tsp salt
Lemon Cream Cheese Frosting
- 2 8-oz packages cream cheese, softened
- ½ tsp lemon zest
- 1 lemon, juiced
- 1 ½ cups powdered sugar
Toppings
- Fresh fruit of your choice (recommend berries and pineapple)
Instructions
Make the cookie crust
- Preheat oven to 350°F.
- Beat butter and granulated sugar at medium speed with a stand mixer or hand mixer until fluffy. Add egg and beat until well blended. Add lemon juice and & zest.
- Combine flour and salt in a medium bowl. Add gradually to butter mixture, beating just until blended.
- Dump dough into a 13-inch round pizza pan and press it out to the sides until it evenly covers the bottom of the pan. Refrigerate for 15 minutes to chill.
- Remove the pan from the refrigerator and place in oven. Bake for 15-18 minutes. Cookie should looked baked and just barely starting to brown around the edges.
- Remove from oven and let cool completely before topping.
Make the Lemon Cream Cheese Frosting
- Combine all ingredients and mix at medium speed in a stand mixer or with a hand mixer until smooth and fluffy.
- Dump on cooled cookie and spready evenly using an angled spatula.
Add the fruit
- After spreading the frosting, add your fruit in any design you like. you can cut your fruit or leave it whole. I recommend leaving most berries whole but slicing your strawberries in half and placing them sliced-side down to keep the fruit as fresh as possible.
- Once finished, refrigerate until serving. Refrigerate any leftovers.
