If you haven’t been having pineapple au gratin with your Easter ham, then you’ve been majorly missing it out all these years.I know it may sound strange, but you’re going to have to trust me on this one.  It’s sweet, it’s savory, it’s cheesy—and it’s topped with buttery, delicious crackers. What else could you ask for? Well, it’s this recipe is as easy as it is tasty and it comes together in just minutes, making it an almost-effortless addition to your holiday table. So yeah, it’s basically magic. 

I love holiday traditions, and this easy side dish is one of my family’s favorites. My mom said she picked it up during her years in the South, and it’s been a staple at every Easter dinner since. And it’s a great addition to any holiday meal that’s served with ham, so sometimes we pull this recipe out at Christmas as well. It’s too good to have only once a year… 

How to make this delicious Easter recipe is really simple and you don’t need any special equipment (ok, maybe a can opener?). Just drain two cans of pineapple tidbits and dump them in a bowl. Add the flour, sugar, and cheese, and give it a good stir. Then you dump it in a square baking pan and top it with the crushed crackers that have been drizzled with melted butter. Pop it in the oven for 30 minutes, and you’re in business. It’s really that simple.

Pineapple Au Gratin

This quick and easy side is the perfect pair to any holiday ham dinner

Ingredients
  

  • 2 20 oz cans pineapple tidbits
  • 6 tbsp flour
  • ¾ cup sugar
  • 2 cups shredded sharp yellow cheddar
  • 1 sleeve buttery crackers, crushed approx. 1 ½ cups
  • 2 tbsp melted butter

Instructions
 

  • Preheat oven to 350°F. Coat an 8×8 or 9×9 square baking pan with cooking spray.
  • Drain the juice from the pineapple cans. Dump the pineapple into a medium mixing bowl.
  • Add the sugar, flour, and cheese to the bowl with the pineapple. Mix and spread into the bottom of the prepared baking pan.
  • In a small mixing bowl, add the crackers and drizzle the butter overtop. Mix well and and sprinkle overtop of the pineapple.
  • Bake 30 minutes. Cool slightly and enjoy.
