Sugar Cookie Fruit Pizza Recipe

Sugar Cookie Base
- 1 cup butter, room temperature
- 1 cup granulated sugar
- 1 egg
- 1 tsp lemon juice
- 1 tsp grated lemon zest
- 2¼ cup all-purpose flour
- ¼ tsp salt
Lemon Cream Cheese Frosting
- 2 8-oz packages cream cheese, softened
- ½ tsp lemon zest
- 1 lemon, juiced
- 1 ½ cups powdered sugar
Toppings
- Fresh fruit of your choice (recommend berries and pineapple)
Make the cookie crust
Preheat oven to 350°F.
Beat butter and granulated sugar at medium speed with a stand mixer or hand mixer until fluffy. Add egg and beat until well blended. Add lemon juice and & zest.
Combine flour and salt in a medium bowl. Add gradually to butter mixture, beating just until blended.
Dump dough into a 13-inch round pizza pan and press it out to the sides until it evenly covers the bottom of the pan. Refrigerate for 15 minutes to chill.
Remove the pan from the refrigerator and place in oven. Bake for 15-18 minutes. Cookie should looked baked and just barely starting to brown around the edges.
Remove from oven and let cool completely before topping.
Make the Lemon Cream Cheese Frosting
Add the fruit
After spreading the frosting, add your fruit in any design you like. you can cut your fruit or leave it whole. I recommend leaving most berries whole but slicing your strawberries in half and placing them sliced-side down to keep the fruit as fresh as possible.
Once finished, refrigerate until serving. Refrigerate any leftovers.
